This Festive Bikini – The Method
WHere is a home-style version of a cocktail from the seasonal cocktail list. This is a large-volume premix which is bursting full of essence of the festive period, making it excellent for hosting a celebration. Any leftover syrup you can use for breakfast cocktails, puddings, or to mix more rounds of this cocktail.
Bikini
Yields 10 servings
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put all the ingredients into a pot, bring to a simmer, stirring until the sugar dissolves. Next, remove from the stove allowing it to cool down completely. Decant into a sealable bottle, seal and refrigerate it in the refrigerator, it will last for around one month.
For the Batch Mix: Pour all the liquid ingredients in a big jug, leave to sit for an hour, then filter it best through cheesecloth, so it's fully clarified.
When ready to serve: Add 85ml from the premix into your mixing glass packed with ice, and agitate lightly for a minute until cold. Filter to a cold coupe glass or a similar vessel, top with the cranberries and complete it by giving it a light spray with the mandarin essence over the top.
